Ginger Soup

Ingredients:

3 Tablespoons olive oil

2 onions, coarsely chopped

1 Tablespoon fresh ginger, minced

2 lbs chicken (with bone)

1-2 potatoes, chopped

2-3 carrots, chopped

2 cups celery, chopped

2 light green peppers, chopped

8 cups vegetable stock or cold water

salt & pepper, to taste

lemon juice, to taste

Preparation:

Heat the olive oil over medium heat in a large pot and brown the chicken. Then add the onions, ginger, vegetables and stock and bring to a boil. Lower to a simmer and cook covered for ~40 minutes, or until the vegetables are tender. Add the salt and pepper, and some lemon juice just after serving.
