Arakas Laderos (Greek style peas)

Ingredients:

~1/4 cup olive oil

1 medium sized onion, chopped

1 lb green peas (frozen)

1 15oz can diced tomatoes or 2 fresh tomatoes, peeled and chopped

1 Tb tomato paste

salt, pepper to taste

2 Tb fresh dill, chopped

~1 cup water

Preparation:

Heat 2 Tbsp of oil in a large pot and saute the onions until soft and limp. Add the rest of the ingredients and bring to a boil. The water should half cover the peas. Cover and simmer for ~45 min until only the oil remains and the water has been absorbed.

There are several variations to this dish: one can add potatoes, lima beans, artichokes, etc. to make the dish richer and more filling.

Serve with bread and feta cheese.
