Arugula Salad

Ingredients:

1 Tbsp vinegar (red wine, white wine or balsamic will do)

1 tsp Dijon mustard

1 large clove garlic, sprinkled with salt and crushed

5 Tbsp olive oil

salt and freshly ground pepper

6 cups fresh arugula, washed and dried

4-5 sundried tomatoes

8-10 grape tomatoes

shaved Parmesan

Preparation:

In a small bowl whisk together the vinegar, mustard and garlic. Add the oil gradually, beating it in with a fork, so that it makes a nice emulsion. Season with more salt, if necessary, and pepper.

Place the arugula and tomatoes in a large bowl and toss with the dressing before serving. Garnish with shaved Parmesan.
