Beet Salad

Ingredients:

4-5 beet roots (with stems if desired)

~3-4 Tbsp olive oil

~1-2 Tbsp vinegar, to taste

1 clove garlic, minced

~1/2 tsp salt, to taste

Preparation:

Rinse beets, chop off stems and tail of root. Boil for ~1 hr or till cooked (slice with knife to check- like boiling potatoes, but it takes much longer). Remove stems after 20-30 min when done. When beet roots are done, drain, let cool for 10 minutes and then peel off the skin. Chop into slices and add olive oil, vinegar, garlic and salt to taste.
