Bread

Ingredients:

2 cups white flour

1/2 cup yellow corn flour

3/4 cup rye flour

3/4 cup whole wheat flour

1 1/3 cup water

3-4 Tbsp olive oil

salt

1/2 Tbsp sugar (for yeast)

dry yeast or beer yeast (better)

olives, rosemary etc (optional)

Preparation:

Prepare yeast with sugar. Combine all ingredients and knead (either by hand or in bread machine). By hand: knead 100 times, then let it rest for 30 minutes, knead another 100 times, and then let it rest for at least 1 hour.

Punch down dough, form loaves, let them rise and then bake at 375F/180C for about 25 minutes.

Note: If adding olives, either reduce water or add flour.
