1 cup yellow split peas
1 onion, finely chopped
1 clove garlic, finely chopped
3 Tbsp butter or olive oil
1 tsp salt
1/4 tsp oregano
Parsley, minced
Olive oil
Wash peas, cover with water, and bring to a boil. Remove scum. Saute onion and garlic in butter until golden. Add to peas with salt and oregano. Simmer, covered, until water is absorbed. Stir occasionally with a wooden spoon. Before serving, sprinkle with parsley and olive oil. Serve hot or cold.
