Fennel, Arugula and Smoked-Trout Salad

Ingredients:

2 cups arugula, chopped

1 1/2 cups thinly sliced fennel bulb

1/3 cup thinly sliced red onion

1 1/2 Tbsp sour cream or strained yogurt

3 tsp olive oil

2 tsp prepared horseradish

2 tsp finely chopped fresh dill

1 1/4 tsp vinegar

2/3 cup smoked trout, coarsely flaked

Preparation:

Whisk sour cream, olive oil, horseradish, dill, and vinegar in small bowl. Season dressing to taste with salt and pepper. Place arugula, fennel, and onion in medium bowl. Add dressing and toss to coat.
