Giant Beans (Gigantes)

Ingredients:

2 pounds dried giant white beans

1 cup olive oil

3 cloves garlic -- chopped

1 onion, med. -- chopped

1/2 cup celery -- chopped (optional)

2 med carrots -- chopped (optional)

1/3 cup parsley -- minced

salt & pepper to taste

3 Tb tomato paste + 1 1/2 c water

additional water as needed

Preparation:

Wash the beans, place in water, and soak them overnight. Drain them, then place in a pot of fresh cold salted water; cook for 45 min.; drain. Place oil, garlic, and onions, celery, carrots, parsley, beans, tomato paste mixture, salt, pepper and water in a baking pan and bake in preheated 350F/180C oven for ~1.5 hrs. The beans absorb a lot of water, so make sure to add enough (should be almost covered at beginning).

Serve with bread and feta cheese.
