Granola

Ingredients:

2 cups rolled oats* (not instant)

1 cup almonds, thinly sliced

1/4 cup sesame seeds

1/2 cup sunflower seeds

1/2 cup wheat germ

1/2 cup raisins

1/2 cup other dried fruit (optional)

2 Tbsp (1/8 cup) olive oil

2 Tbsp (1/8 cup) honey

1/4 cup ground flaxseed (optional)

1 tsp vanilla extract (optional)

1 tsp cinnamon (optional)

Preparation:

Combine the oats, nuts and grains in a large bowl. Next add oil and honey, using the same measuring spoon (the oil prevents honey from sticking), and the vanilla and cinnamon if desired. Mix until evenly coated. Spread onto a baking pan.

Bake at 300F/150C for 30 minutes, stirring the granola every 10 minutes, until it is golden brown. Remove from oven and transfer back to mixing bowl. Add the raisins and fruit and stir to combine.

* A mixture of oats, wheat, buckwheat, rye, barley can also be used.
