Hummus

Ingredients:

1 can (1 lb) chick peas (empty the water)

scant 1/3 cup tahini (sesame seed paste)

2 cloves garlic, minced

1 tsp. salt

1/4 tsp. pepper

1/3 cup lemon juice (or more)

1/2 cup olive oil

1 tsp. cumin (or more)

3 Tbsp. chopped parsley

1 red pepper, diced (optional)

Preparation:

Mash chick peas in food processor. Adding the lemon juice and olive oil makes it easier. Process with ingredients up to cumin.

Serve with pita rounds, crackers or on bread or as a side dish.
