1 cup lentils, rinsed
~1 Tbsp olive oil
1 onion, chopped
1-2 cloves garlic, minced
~2 tsp tomato paste
~7 cups of water
2-3 bay leaves
~2 Tbsp red wine vinegar (to taste)
salt, pepper
Heat olive oil in a pot and saute onion to soften (~10 minutes). Add garlic and tomato paste and stir for a couple minutes. Add the lentils to pot with the water and the bay leaves and boil for about an hour or till soup thickens. Afterwards add vinegar, salt and pepper to taste.
