Mayonnaise

Ingredients:

1 large egg

1 tsp lemon juice

1 tsp vinegar

1 tsp Dijon-style mustard

1 tsp salt

Freshly ground white pepper

1 1/2 cups (35cl) olive oil

Preparation:

Using the metal blade of the food processor: add the first 5 ingredients and 3 Tbsp of the oil in the work bowl and process for 8 seconds. With the machine running, drizzle the remaining oil through the feed tube in a thin steady stream. The mayonnaise will thicken as the oil is added. Add salt and pepper to taste and refrigerate the mayonnaise in an airtight jar. It can be stored in the refrigerator for a month. Makes 1 3/4 cups (41cl).
