Octopus salad (Xtapodi Xydato)

Ingredients:

1 octopus

1/4 cup water

1/3 cup olive oil

1/3 cup red wine vinegar

1 clove garlic, minced

2 Tbsp chopped parsley

salt, pepper to taste

Preparation:

In a pot bring water and octopus to a boil, then simmer for 1.5 hours or until fork-tender. Drain. While still warm, remove the skin. Cut into bite size pieces, add the remaining ingredients and stir.
