4 cups diced, boiled potatoes
1 1/2 cups sliced celery
1/2 cup sliced scallions
2 Tbsp snipped parsley
1 cup mayonnaise
1 Tbsp vinegar
2 tsp mustard
1 1/2 tsp salt
1/4 tsp pepper
1/4 cup sliced radishes (optional)
Combine all ingredients and refrigerate. Garnish with parsley or olives. Makes 6 servings.
