Curried Red Lentil Stew

Ingredients:

2 cups red lentils, rinsed

~2 Tbsp olive oil

1 onion, chopped

1-2 cloves garlic, minced

1 tsp fresh ginger, minced

5 tsp curry powder

1/4 tsp cayenne pepper

6 cups broth (or 6 cups water+2 bouillon cubes)

1 15oz can chick peas

Preparation:

Heat olive oil in a pot and saute onion to soften (~7 minutes). Add garlic and ginger and saute for ~3 more minutes. Add spices and broth and bring to a boil. Add lentils and chick peas, simmer for 10 minutes.
