Roasted Vegetables

Ingredients:

Any of the following vegetables: zucchini, green, red and yellow peppers, eggplant

1-2 onions

4-5 cloves garlic

1/3 cup olive oil

3/4 tsp salt and 1/4 tsp pepper

Preparation:

Chop the vegetables into a pan. Try to make them the same thickness so they cook evenly (like the dimensions of a french fry from McDonald's!). Add olive oil, salt and pepper and mix with your hand (works the best). Bake in the oven at 450 F for 45-60 min or until vegetables are "wilted", stirring every 15 min. This goes well with salmon, steak, pork chops etc.

For salmon: rinse salmon, then sprinkle/rub with salt and pepper. Place on a tray and bake at 400F/200C for ~20 min, turning over after 10 min.

For meat: rinse, then sprinkle/rub with salt, pepper and oregano. Place on a tray and bake at 400F/200C for ~20 min, turning over after 10 min.
