Spinach Pie (Spanakopita)

Ingredients:

2 lbs spinach, fresh or frozen

1 1/2 - 2 cups dill, chopped

1 cup scallions, chopped

2 eggs

1/3 cup olive oil

1 1/2 tsp salt

1/4 tsp pepper

dash nutmeg

1 cup feta cheese, crumbled

1/2 lb phyllo pastry sheets

~5 Tbsp olive oil (or melted butter)

Preparation:

Boil or steam spinach, drain, squeeze out water and chop. Add the dill and scallions and let cool. Beat eggs lightly and add to mixture. Add salt, pepper, a dash of nutmeg, 1/3 cup olive oil and the feta and mix well.

Place 6-8 layers of phyllo pastry sheets in a greased 11x14x2-inch pan (metal works better than glass pyrex), brushing each sheet well with olive oil. Add spinach mixture, then place the remaining layers of phyllo pastry sheets, again brushing each sheet with oil. Brush the top sheet with oil, tuck in the edges (not to burn) and score the pie (e.g. into 24 pieces). Bake at 350F/180C for ~45min or until golden brown.
