Tabouli

Ingredients:

1 cup bulgur wheat (a.k.a. pligouri)

1 1/2 cup boiling water

1 1/2 tsp salt

1-2 cloves garlic

1/4 cup lemon juice

1/4 cup olive oil

2 tomatoes, diced

3 cups chopped fresh parsley (flat)

4 green onions, chopped with tops

Preparation:

Pour boiling water over bulgur wheat and salt. Cover bulgur wheat for 30 minutes and let set. Stir next three ingredients into bulgur and chill for 2-3 hours. Add tomatoes, parsley and green onions and gently toss before serving on bed of lettuce.

Optional additions are chopped mint, fresh sliced mushrooms, diced green peppers, sliced radishes, bean sprouts, sliced hard-cooked eggs.

A good variation is to use quinoa instead of bulgur wheat. Bring 1 cup quinoa, 1 1/2 tsp salt and 1 1/2 cups water to a boil, then simmer for 15 min or till water is absorbed. Then continue following the recipe above.
