Tzatziki

Ingredients:

2 cups (or 500 gr) strained yogurt *

2 Tb olive oil

2 tsp lemon juice

2 cloves garlic (minced)

1 cucumber

~ 1Tb chopped dill (optional)

salt, pepper to taste

Preparation:

Slice cucumber lengthwise and use a spoon to remove the seeds, if necessary. Grate cucumber in a dish and sprinkle with salt. Let stand for 15 min, then squeeze out the water. Mix ingredients and place in refrigerator for at least 2 hours, for flavors to mix. Serve with pita bread or regular bread.

* If you can't find FAGE strained yogurt, buy plain yogurt and strain it, either in a cheese cloth or in a colander layered with paper towels, over a pan. Strain in the fridge at least 2 hours until most of the water comes out.
