Zucchini Bread

Ingredients:

3 cups flour

2 tsp. baking soda

1 tsp salt

1/2 tsp. baking powder

2 tsp. cinnamon

1/2 tsp. ground nutmeg

1 cup walnuts (chopped)

1 cup raisins

8 1/4 oz. can crushed pineapple (optional)

3 eggs

2 cup sugar

1 cup oil

2 cups grated zucchini

Preparation:

Beat eggs until frothy. Add sugar, oil and beat until thick and lemon colored. Add flour mixture (sift flour with cinnamon, bak. soda, salt, bak. powder). Stir in 2 c loosely packed grated zucchini. Fold in nuts. Pour into 2 oiled and floured loaf pans lined with waxed paper.

Bake at 350F/180C for 1 hr. Cool in pan ~10 mins. Invert on rack and cool completely.
